Happy Wednesday! I have been enjoying soaking in the sunshine each morning.

If I could live somewhere where it was sunny every day I’m pretty sure I would do it. You can’t beat daily sunshine early in the morning in my opinion! I am already mourning the fact that we are past the summer solstice. WHY must it get darker and darker in the morning from now on???

Happy Wednesday! How is your week going? I have been enjoying the sunshine, longer days, and getting outside early in the morning!

Also, how is it already almost 4th of July weekend? The start of summer seems to be flying! We are headed to my grandparents’ for the weekend and will be enjoying the time on the water and time with family. And of course some delicious food! (Cherry pie and vanilla ice cream, anyone??)

Hello everyone! How has your week been going?? We went camping in Mackinaw City over the weekend which was fun minus the black flies that were swarming all over near the water (apparently they arrived early this year a couple of days before we got there, causing us to miss out on our waterfront campsite! :/). We went hiking and enjoyed the views near the bridge. It was also a bit cold and felt more like fall!

Happy Tuesday! It has been so nice finally having some sun this week after several weeks of cold, rainy, and cloudy weather – such a terrible start to spring! Although now it is supposed to get up into the 80s (at least in Michigan) this week which is a bit hot for May in my opinion!! Can we not just have a few weeks of 60s and low 70s?? But as long as it stays sunny that is most important weather-wise in my opinion! I have enjoyed getting outside in the morning and hopefully catching the sunrise while I am out running or walking. I am also enjoying having some more time for cooking and baking now that I am done with my internship and exam! Here are some tasty eats from the past couple weeks!

Very delicious key lime cheesecake that I made for Mother’s Day! I have never been the biggest fan of key lime pie, but key lime cheesecake was a whole other level!

Happy Wednesday! I just finished my Food Gatherers rotation last week and am now on to five weeks of a clinical inpatient rotation with Michigan Medicine focused on pediatric intensive care nutrition. Second-to-last rotation! On to some delicious eats from the past few weeks.

This smoothie is definitely my new favorite. Actually tastes like a snickerdoodle or tahini date cookie. You must give it a try! I also add a big spoonful of whole milk yogurt and vanilla protein powder. A fabulous way to start the day!

Happy Wednesday! How is your week going? Right now I am doing a rotation with Michigan Medicine’s Comprehensive Eating Disorder Program which I am LOVING because it is so interesting and I am learning a lot! I will have a post next week with some more details on what that has been looking like. I have a lot of delicious food to share with today you to inspire you in the kitchen!

Let us start off with this salad… this is probably my favorite salad that I have ever made! I LOVE fattoush salad – I used to always get it at the poolside grill at this club where we used to keep our family’s boat and I have not had a fattoush salad that I like as much as that one until now… this one was absolutely fabulous! Usually when I make salads I just make up the topping/dressing combinations, and then occasionally, like for this salad, I like to follow a recipe. This salad was made using this fattoush salad recipe. The toasted pita chips and mint dressing were both especially amazing! Note: Costco also has organic authentic Greek feta cheese which also put the salad over the top.

Happy Wednesday! I hope you are having a nice week so far! I am enjoying the slightly cooler temps here in Michigan as well as having less rain! It has been quite the humid, rainy, and either too hot or too cold summer. This week has been a busy week with a rotation I am doing with the dietitians at the Michigan Medicine Pediatric Surgery clinic. I am mostly shadowing them in their patient visits and then we discuss the cases together, and I am also working on going through different learning assignments and resources related to topics like managing tube feeding regimens and other nutritional aspects of different surgery conditions. Many of the patients seen at this clinic have had pretty involved surgeries for various issues in their GI tracts making it impossible or hard for them to eat orally, so it is vital that they are working with a dietitian and the rest of their healthcare team to still get the nutrition that they need. I will be in this rotation for this week and next. So far I have been liking it and also learning a lot!

Hello friends! I hope you are having a nice week! We are getting ready to head to Florida with Alec’s side of the family on Saturday and will be there for all of next week, and then will be heading back to Michigan to go to my grandparents’ for the 4th (also will have lots of cousins/extended family there).
