Everyday Eats 12.8.21

Happy Wednesday! How is your week going? Right now I am doing a rotation with Michigan Medicine’s Comprehensive Eating Disorder Program which I am LOVING because it is so interesting and I am learning a lot! I will have a post next week with some more details on what that has been looking like. I have a lot of delicious food to share with today you to inspire you in the kitchen!

Let us start off with this salad… this is probably my favorite salad that I have ever made! I LOVE fattoush salad – I used to always get it at the poolside grill at this club where we used to keep our family’s boat and I have not had a fattoush salad that I like as much as that one until now… this one was absolutely fabulous! Usually when I make salads I just make up the topping/dressing combinations, and then occasionally, like for this salad, I like to follow a recipe. This salad was made using this fattoush salad recipe. The toasted pita chips and mint dressing were both especially amazing! Note: Costco also has organic authentic Greek feta cheese which also put the salad over the top.

I made this tasty pumpkin coffee by blending in the Vitamix coffee, almond milk, pumpkin puree, a bit of maple syrup and some pumpkin spice.

This spicy red pasta with lentils was a new dinner recipe that I will definitely be making again!

We went to my family’s house the Saturday before Alec’s birthday to watch Michigan football and my mom got this beautiful cake! It was so tasty too!! I am usually not that into vanilla cake (big surprise!) but this one was absolutely delicious, topped with the best cream cheese frosting.

On Alec’s actual birthday we had palak paneer over quinoa, garlic naan, and salad, as Indian food is one of Alec’s favorite cuisines! Personally I am not that into Indian food but it has been growing on me more and is nice to try and branch out my tastes more!

My previous rotation was with WIC in Flint so was quite a drive each day… the last day of my rotation I had a one of our monthly dietetic internship meetings with our cohort (that was on Zoom) so I went to this cafe in downtown Flint. The cafe was so beautiful and the latte delicious! I had never been to downtown Flint and didn’t realize the number of neat restaurants and cafes that there are! Would be fun to go back!

I have been baking a lot lately and made these delicious double chocolate pumpkin muffins – they were super fudgy and tasty!

My favorite breakfast lately – overnight steel-cut oatmeal topped with flaxseeds (or sesame seeds), almond butter, honey, a honeycrisp apple, and cinnamon.

We didn’t have much in our fridge, so I used what we had on hand to come up with this dinner that turned out quite tasty! Soft scrambled eggs with jalapeño and cheddar cheese, roasted bell peppers and red onion, homemade sourdough, and salad. Protein + Carb + Fat + Fiber!

Roasted potato medley with salt + pepper, fresh garlic, and fresh rosemary – the best way to make potatoes in my opinion!

My dad and his friends have a big tailgate right outside the Big House for every Michigan football home game and they always have the most amazing food! For the OSU game we had ribs, a baked bean medley, the BEST mac n’ cheese, and some sort of cornbread/egg type bread – it was fabulous!!!

What was even better than the food was the Michigan win!!! A historic win against OSU and all the snow and everyone rushing the field… what could be better??? Was definitely one of the best days of my entire life! GO BLUE!

A few things I am grateful for and enjoying lately!

I actually like in the winter how it gets dark really early… I wouldn’t like that all year round but I like it in the winter with how cozy it feels when it gets dark and I like to stay inside all evening and spend time in my pajamas reading!

Lately there have been a number of beautiful sunsets! We have several large windows that face west so I will be in the kitchen making dinner around 5 or so and catching glimpses of the sun setting has been really beautiful!

I really love sitting by our Christmas tree and enjoying the lights! Here it is along with some more homemade bread!
