Coconut Apricot Energy Bites
Chewy, sweet coconut apricot energy bites – the perfect on-the-go or at-home snack. Packed with juicy apricots, salted cashews, coconut, and chia seeds for extra texture/nutrition, these easy-to-make energy bites are sure to become something you will want to make on repeat!Â
We love our chocolate-flavored energy bites over here, but recently I decided to switch it up and add a new flavor into the mix – thus, these tasty coconut apricot energy bites were born! Using only 5 ingredients and a food processor, these bites can be whipped up in mere minutes! If I’m going to take the time to prep a snack beforehand, I want it to be simple ingredient-wise and clean-up-wise. These perfectly fit the bill!
Ingredient Info & Tips:
Dried Apricots: The juicier the better! I buy the Sunsational Fruits brand from Costco, which I love because they come in a large package and they also have no added sugar. As an added bonus, dried apricots are also a good source of vitamin A and potassium!
Cashews: I recommend using roasted, salted cashews for this recipe, however, feel free to use whatever kind of cashews you have on hand. The cashews help bind the apricots and also add some protein for some staying power!
Coconut Flakes: I used unsweetened coconut, as I think sweetened would be a bit too sweet along with the sweetness of the dried apricots. The coconut is used both in the bites and for rolling.
Coconut Flour: This gluten-free flour has a naturally sweet taste compared to other flours – it also is relatively high in fiber! I used it here to give some additional structure to help with rolling the bites.
Chia Seeds: Added for a fun pop of color/texture and a nutritional bonus! Chia seeds bring some additional fiber and also are a great source of omega-3 fatty acids. Beware that they easily get stuck in teeth!
Coconut Apricot Energy Bites
Preparation Time: 10-15 minutes
Yields: 12-15 bites

Ingredients:
2 cups dried apricots
1 cup salted cashews
1/2 cup unsweetened coconut, plus extra for rolling
1/4 cup coconut flour
1/4 cup chia seeds
Directions:
- Before mixing together the energy bites, place about a cup of unsweetened coconut into a food processor, and give it a few quick blends to chop up the coconut. Set this aside in a small bowl for rolling later.
- Add dried apricots and cashews to the food processor and blend until fully blended.
- Add the rest of the ingredients (unsweetened coconut, coconut flour, chia seeds) and continue blending until smooth.
- Set the energy bite mix into a mixing bowl, then use your hands to roll into balls (about 12-15, depending on what size you want them to be). After rolling each ball, roll it into the bowl of unsweetened coconut flakes you set aside earlier. The dough is sticky when initially rolling, so coating it in the coconut flakes is key!
Storage:
These bites can be stored in the fridge for up to a week or two. Otherwise, keep them in the freezer and take them out for later snacking!
