Blueberry Date Summer Salad
This blueberry date salad brings a unique blend of summertime flavors and is sure to be your next favorite lunch or dinner option!
Today I have one of my favorite salad recipes to share with you! This gorgeous salad is topped with blueberries, dates, chopped cucumbers and red onion, pistachios, and feta cheese, all drizzled with a dark balsamic dressing. It’s fabulous on its own, but would also taste great topped with some chicken or chickpeas for added protein! You’ll love to add this salad to your summer lunch rotation!
Blueberry Date Summer Salad
Preparation Time: 15 minutes
Yields: 2 main servings or 4-5 side servings
Blueberry Date Salad Ingredients:
4-5 cups mixed greens
1 cup blueberries
3/4 cup chopped cucumbers
1/4 cup chopped red onion
1/2 cup feta cheese
1/3 cup salted pistachios
6 pitted dates, chopped
Dark Balsamic Dressing Ingredients:
3/4 cup extra-virgin olive oil
1/2 cup balsamic vinegar
1 tsp Dijon mustard
2 tsp maple syrup
1/4 tsp chopped thyme (fresh or dried)
1/4 tsp chopped rosemary (fresh or dried)
salt and pepper to taste
Directions:
- Place mixed greens into a large enough salad or mixing bowl.
- Chop cucumbers, red onion, and dates into size desired.
- Add toppings: suggested order is chopped cucumbers, blueberries, chopped red onion, feta cheese, pistachios, and then chopped dates.
- Mix together dressing ingredients in a separate, smaller bowl. Adjust ratio or seasonings if desired.
- Drizzle the dressing over the salad, and enjoy!
Notes:
- This salad keeps well in the fridge and can be multiplied and/or meal prepped in advance; just don’t add the dressing until ready to serve.
- Suggested toppings for added protein include chicken, salmon, chickpeas, white beans, or quinoa.
- This salad also tastes great topped with avocado for some extra healthy fat!
- Feel free to sub goat cheese if you prefer, or to omit the cheese altogether for a vegan option.
