Hello everyone! Somehow we are already basically through March. Is it just me, or did this month fly by??
The degree to which March goes by quickly or slowly to me seems to perfectly correlate with Michigan’s appearance or lack thereof in the NCAA Tournament. 🤷♀️
Go Blue tomorrow night! (Or Saturday morning, as I will most certainly be watching it recorded with the late start time!)
We’ve had a week or two of warmer / somewhat sunnier weather here in Michigan, along with a good amount of colder days. Such is March in the midwest.

Let’s recap the month with a few recent eats, along with what I’ve been enjoying lately!
Continuing to do lots and lots of Asian-inspired dishes! These days you’ll often find me chopping up plenty of red bell pepper, purple cabbage, broccoli, onion, bok choy, and plenty of garlic and ginger, all for some sort of sauté, stir fry, soup, or curry.
I’ve also been into this red lentil soup lately — super easy to throw together! I’ve been subbing red bell peppers for the carrots/celery and adding extra seasoning / salt for flavor. I’ll make a big batch, freeze in double portions, and then use it to cover our lunches a day or so a week.
I like to do “themed” dinners to mark the first official day of each season. Last week we had a spring veggie curry to mark the first day of spring!
Lastly, I am BACK on my evening chocolate routine. I couldn’t take the full low-oxalate diet any longer, so am now incorporating my evening chocolate and also morning energy bites. I’m not sure how much long I will stick with the diet outside of that, since it’s kind of driving me crazy. I was originally hoping to stay with it until June or July, but now I’m thinking of taking a total break and potentially coming back to it later this spring or summer if I feel up for it.
Sadly Trader Joe’s has been out of my favorite chocolate that I much prefer to other typical grocery store varieties. (I like their organic, Belgian dark chocolate). I have been making do with these Theo bars from Whole Foods. I don’t like the flavor quite as much, and they aren’t nearly as high in iron content, but I will at least concede that they are fine enough! 🙃
After the dreariest winter, I’ve been loving seeing the occasional / slightly more frequent sunrise in the mornings. The full moon was also especially beautiful earlier this month! Several days of a bright orange moon each morning.
I’ve been loving this decaf chai roobois tea lately! I also really like the chocolate pu-erh tea which I unfortunately didn’t realize was caffeinated when I bought it (not drinking any caffeine right now and TBD about whether I go back to this at all in the future — thinking of staying caffeine-free!). At any rate, I’ll keep it on hand for now to have once in a blue moon!
Currently reading Wintering by Katherine May, which I’m liking for the most part. Also reading a couple of other books. So many books that I’m wanting to read that it’s been hard to read fast enough! 🙃
If you are into reading, when do you typically find time to read? For me it’s mostly before bed, but also the occasional free evening or if I have a few extra minutes before we have dinner.
–> Celebrating the resurrection of Christ on Easter! It’s also fun to have Easter on my birthday which happens to be the case this year. I have had Easter on my birthday twice in the past (2003, 2014), and apparently it won’t be on April 20th again until 2087! So, I will have to make it to my mid-90s to see Easter on my birthday again! I’m not sure how the date for Easter is determined but would be interested to find out.
–> Earlier sunrises, warmer temps, and more sun! We can all hope.
–> Hopefully having better work boundaries. I feel like I have been working more in the evenings and a bit on Saturdays for various reasons that I am okay with but that can’t go on forever. I may continue with this right now to some extent, but I also need to be more intentional about my work time, such as scheduling one hour on the weekends to get some key tasks done and then sticking to that.
