Everyday Eats (November 2025)

Happy almost Thanksgiving! 🦃

This morning on Instagram, I’m posting a few tips about how to feel calm and centered around food this Thanksgiving. Sharing a few here on the blog before tomorrow!

  • Have an *actually filling / normal* breakfast. Skipping breakfast will only set you up to feel obsessive and chaotic around food as the day goes on!
  • If you don’t eat your Thanksgiving meal as a lunch, have an *actual lunch* too (or a satisfying plate of appetizers).
  • Genuinely allow yourself to *actually enjoy* the various foods you might not eat often — with no strings attached! (Strings attached = now you can’t have any later, now you have to spend extra time at the gym tomorrow, etc.).

Most importantly, aim to focus more on connecting with others and less on any obsessive or disordered thoughts about food. 💫

End of fall meals & snacks

Monday evening meal prepping a lunch and snack for the week! Curry lentil soup and chocolate chip muffins.

I don’t usually make soup for lunches but when I do it makes things really easy for the rest of the week as far as lunches go!

Alec’s birthday was last weekend and we had my side of the family (who is local) over for a small bday gathering the weekend before. I made my favorite bolognese again (recipe adapted from this cookbook). 🥕🍅

I also tried a new rosemary cassava bread recipe!

I have been into using my ice cream maker lately… I’ve made mint chocolate chip a couple times (which we had w/ brownies for Alec’s bday). It couldn’t be easier!

Also a chai (vanilla w/ added chai spices). With obvious addition of chocolate drizzle! 😋

Chicken tikka masala for Alec’s actual day-of birthday!

My favorite meal from the past month was this allergy-friendly mac and cheese. I used to make a non-dairy mac and cheese with a cashew-based sauce, so am so happy to have this nut-free version which I like even better!! So creamy + good. I like to add peas and broccoli for extra greens + texture.

I’ve been really into perfecting my roasted potato game lately… this was a delish version of potatoes roasted in coconut oil w/ plenty of Himalayan salt + fresh garlic + thyme. The key to the best roasted potatoes is to use LOTS and LOTS of seasoning / salt! (I recommend Himalayan pink salt which is the healthy / natural kind).

More roasted potatoes (this time in tallow w/ salt + paprika + garlic powder) served with my fave simple go-to dinner lately of chicken burgers w/ ketchup along with a veggie of some sort (this time sautéed green beans).

I’m not generally that into green beans — it’s not that I don’t like them necessarily or won’t eat them, I just usually vastly prefer other green vegetables that I find more interesting! (Broccoli, brussels sprouts, etc). But, sometimes you have to switch it up… 🤷‍♀️

Earlier in November we hosted Alec’s mom for a weekend. For one of our dinners I made turmeric ginger (chickpea) rice which has juicy dried apricots all throughout. Served with salmon seasoned w/ curry powder along with steamed broccoli and salad. Lava cakes for dessert!

We also went out to lunch at The Hen (formerly Stray Hen) earlier that day and I had more salmon, this time in salad format.

My new absolute favorite brownie recipe that I made to bring when we went to have dinner with one of our friends. I prefer to make the brownies 1.5x so that they are thicker than how the original recipe turns out! If you don’t need to modify the flour, I imagine regular flour would be a fine sub (or almond flour).

We usually have some sort of animal protein with pretty much all of our meals but I’ve been trying to do ~one vegetarian dinner a week to help with staying within our grocery budget. I didn’t have that high of hopes for this vegetarian chili (despite the stellar reviews!) but it ended up being really really good!!!

I have been in an ongoing search for a “better chili” because I keep making them over the years and haven’t quite landed on any that I absolutely love. This version has been my favorite yet! I want to try making it again with shredded chicken in the crockpot because I think that would be even better. (Recipe note: I love to use the fire-roasted tomatoes from Trader Joe’s.) I also added some salsa / additional seasoning. 🌶

Another (somewhat similar) vegetarian dinner of black bean soup served w/ cilantro, coconut yogurt, and chips. A simple meal that I make pretty routinely!

Back to making more coconut chips to have on hand as a snack. In a large bowl, I mix together the coconut chips w/ some cacao powder, cinnamon, coconut oil, and a drizzle of maple syrup. Then I bake in the oven until toasted! I’ve been eating these before my morning exercise along with one of my coconut date balls.

Typical afternoon snack of a chocolate chip muffin, coconut yogurt w/ frozen (thawed) blueberries, and part of a beef stick… (wasn’t wanting the entire thing so decided to cut it in half!).

A recent favorite lunch salad! Ground beef cooked in tallow w/ paprika + garlic salt + Himalayan salt (SO good) along with a honey mustard dressing from the Ambitious Kitchen cookbook. I need to keep making this protein / dressing combo!

Everyday Enjoyment

Looking forward to some extra rest + relaxation time! 

SO looking forward to things slowing down a bit as the year comes to a close… I always love the space to relax more and decompress with some additional time off of work and somewhat of a break from normal rhythms.

We always get our (fake) Christmas tree out the weekend after Thanksgiving which I am also looking forward to this weekend! 🎄

The quietness + beauty of November

I’m realizing November might be my favorite month?? Which seems like somewhat of an odd realization to me since I don’t know if it’s a “typical” favorite month for that many people (although I could be wrong!). I love fall and love September / October, but find that these months are usually pretty busy for us so I like how things feel a little slower in November. I also love being back on Standard Time so the mornings are lighter. And I weirdly like the dark / quieter evenings! (Better for staying inside in my pajamas and reading…).

Start of Michigan Basketball 🏀🏀

I haven’t been as into college football lately for a variety of reasons, but am looking forward to basketball especially since Michigan is supposed to be really good this year! We have tickets to a game at the start of December which we are pumped for! We also enjoy the fun of basketball games during the week (versus having to wait until the weekend all the time like with football).

Beauty of fall a couple weeks ago…

Followed by our first snow! (Also beautiful in a different way).
