Hi everyone!

How is your week going?

It has been insanely hot and humid here the past week or so. We seemed to have skipped spring this year and gone straight to the heart of summer! Our AC has been working overtime. 🀯

We tried to go on a hike last weekend and then averted plans (out of the woods at least) given the increased amount of bugs with all the humidity!

What have you been doing to stay cool??

Meal & snack inspiration from the past month

Lately I’ve been loving this blackened chicken seasoning that I’ve been using on chicken thighs. Last night I made it again with steamed broccoli and coleslaw. All the cold and crisp food options this time of year. πŸ‘Œ

I’ve had the same food processor for almost 7 years and finally for the first time used the shredding attachment to help with quickly making shredded cabbage for coleslaw. What have I been doing up until now???

More chicken salad for lunches! This version is a honey mustard chicken salad w/ celery, green cabbage, red onion, and prunes.

A few weeks ago we were out on a mini day trip and got back kind of late, given we still had to throw together dinner. (I was originally thinking we would be home earlier when I planned the meals).Β  I was absolutely starving — thankfully we were able to work together to quickly knock out some shakshuka and seasoned potatoes eaten right before I went to bed! πŸ™ƒ

Clients often ask me if it’s “okay” to eat right before bed. Short answer, yes! (As long as it doesn’t throw off your sleep).

I’ve been getting into eating different cuts of meat lately in my quest to eat more animal protein. This was a Mexican-seasoned beef brisket that I made in the crockpot, served with chickpea rice, arugula, mango cucumber salsa, and a cilantro lime vinaigrette.

I also made a lamb curry based loosely off this recipe. We liked it, but I have some other lamb curry recipes I’d like to try that I think we would like better!

Chocolate coconut milk ice cream that I made using my new ice cream maker! This couldn’t have been easier.

What’s a favorite summer dessert you want to have this summer??

For a brief moment in time, Trader Joe’s was back with my favorite chocolate! And sadly not the next week. 😞 It seems to be hit or miss (mostly miss) due to supply issues.

Refreshing salad of arugula, chopped cucumber + red bell + carrot, mango, salmon, and a mango basil vinaigrette.

A go-to salmon seasoning of mine is simply salt + garlic powder + lots of paprika.

Nourishing dinner of Italian-seasoned ground beef, potato salad, steamed green beans, and side salad.

Lately I’ve been making my ground beef in plenty of coconut oil, giving this meal lots of healthy fats!

Everyday Enjoyment

Sitting out in the sun whenever I can

Even with the humidity, I absolutely love the sunny days when I can get some warm sun on my skin for a bit! Usually I’ll have my lunch on our balcony, or I’ll sit outside for a few mins after I eat if it is super humid / hot.

All the summer produce

In addition to the recent eats above, I’ve been super into all things strawberry + honeydew melon! A wonderfully ripe honeydew melon is very underrated in my opinion!

Eleanor Oliphant is Completely Fine andΒ The Obstacle is the Way. (Also reading a couple of health-related books). I recently told Grok 10 of the fiction books I’ve read in recent years that I liked a lot and asked him to give me 10 new suggestions based on that which was very helpful!
